All the flavors are present in this delicious Vegan Gumbo! The only thing missing from this recipe are all the seafood and meats and I promise you won't miss them.

APF 1/4 CUPCanola Oil 6 TBS
Vegateble Stock 4 CUPS
Small Dice Onion 4 CUPS
Celery 2 CUPS
Bell Pepper 2 CUPS
Gumbo Spice Blend
Garlic Minced 3 TBS
Diced Tomatoes (1) 14 OZ CAN
Bay Leaf 1
Thyme Sprig 1
Tamari 1 1/2 TSP
ACV 1 1/2 TSP
Vegan Worcestershire Sauce 1 1/2 TSP
Kidney Beans 2 CUPS COOKED
Okra Segments 2 CUPS
Brown Rice Cooked (ABOUT 3 CUPS FOR SERVING)
Parsley GARNISH
Scallions GARNISH
File Powder PINCH FOR GARNISH (OPTIONAL)
Hot Sauce (OPTIONAL)

Heat vegetable stock and set to the side.

Combine flour and oil in a pan. Stir continuously until dark brown for about 45 min.

Add onion, celery, and bell pepper. Cook til translucent.

Add creole seasoning and garlic. Cook til aromatic.

Whisk in stock until incorporated. Add tomatoes, bay leaf, and thyme.

Bring to a boil and simmer for 45min until sauce has thickened.

Add tamari, ACV, worcestershire sauce, kidney beans, and okra. Simmer 20 min, and season to taste.

Serve over riceand garnish with parsley , scallions, file powder and hot sauce.
